Ingredients:
1 lb. spicy smoked farmer’s sausage, chopped
1 lb. fresh mushrooms, sliced
1 cup fresh radishes, sliced
1/2 lb. Provolone cheese, cut in strips
1 lb. mixed fresh greens (about 10 cups)
Quilt Inn Dressing
2 tbsp. Dijon mustard
3 tbsp. red wine vinegar
2 cloves garlic, minced
2 tbsp. Herbes de Provence * or any combination of fresh savory herbs
1/3 cup olive oil
1/3 cup sour cream
How to make
Hearty Quilt Inn Salad
Fry sausage in skillet on high for 5 minutes or until browned.
Remove sausage and drain on paper towels to remove excess fat.
Combine sausage, mushrooms, radishes, cheese and toss with greens.
Quilt Inn Dressing
Whisk all ingredients together until smooth.
Toss with salad just before serving.
*Herbes de Provence is a blend of equal parts thyme, rosemary, lavender and Summer savory.
Make it yourself or it may be available in specialty food shops or some supermarkets.
