8 fresh tomatoes, cored, seeded, and chopped
6 scallions, chopped, including greens
2 stalks celery, chopped
1 green bell pepper, cored, seeded, and chopped
1 red bell pepper, cored, seeded, and chopped
1 cup green olives, pitted and chopped
¼ cup capers
1 tablespoon extra virgin olive oil
Handful Italian (flat-leaf ) parsley leaves, chopped

Combine all ingredients, mixing well.
Allow to sit for 2 hours to overnight to allow flavors to blend.
