  Ingredients:
      Serve this with cut-up raw vegetables, thin slices of baguette, or pita triangles. It’s a refreshing twist on the salad, and a pleasant way to get your fresh vegetables!
    • 8 fresh tomatoes, cored, seeded, and chopped
    • 6 scallions, chopped, including greens
    • 2 stalks celery, chopped
    • 1 green bell pepper, cored, seeded, and chopped
    • 1 red bell pepper, cored, seeded, and chopped
    • 1 cup green olives, pitted and chopped
    • ¼ cup capers
    • 1 tablespoon extra virgin olive oil
    • Handful Italian (flat-leaf ) parsley leaves, chopped

How to make
MEDITERRANEAN CHUTNEY
  • Combine all ingredients, mixing well.
  • Allow to sit for 2 hours to overnight to allow flavors to blend.
  • Serve at room temperature.
  • Serves 8.
