During the summer and even a month or two into the autumn succulent melons (galia, candeloupe, etc.) are quite affordable. Puréed melon fruit meat has many uses.
Cut the melon into halves and deseed them.
Spoon out the fruit meat and purée it in a food processor. Place the resulting soup in the refrigerator for at least two hours.
Pour some of the soup into a deep plate and place strawberries in it. Serve immediately.
