    • 1 cup of mashed sweet potatoes
    • 2 cups of sifted flour
    • 1 1/2 teaspoons of sugar
    • 1 1/2 teaspoons of salt
    • 2 1/2 teaspoons of baking powder
    • 1/2 cup of vegetable oil
    • 1/2 cup of milk.

How to make
Sweet Potato Cakes
  • Sift the flour, baking soda, sugar and the salt into a bowl.
  • Mix the oil and milk with the mashed sweet potatoes until well blended.
  • Add the sweet potato mixture to the flour mixture and mix lightly with fork until mixture holds together.
  • Turn the dough out onto a floured board and knead gently until smooth.
  • Roll dough out to about 1/4\" thick and cut into rounds with floured biscuit cutter.
  • Place the sweet potato rounds on a baking sheet and bake at 425 degrees for 10 -20 minutes.
