    • 3 tablespoons cold pressed olive oil
    • 2 onions or 6 cloves garlic, chopped
    • 1 red pepper, chopped
    • 1/2 pound mushrooms, sliced
    • 1 cup brown rice
    • 1/2 cup wild rice
    • 8 cups water
    • 1 cup lentils
    • 1/4 cup millet
    • 1/4 cup amaranth
    • 15 oz. can diced tomatoes
    • 2 carrots, sliced
    • Other vegetables, chopped (spinach, bok choy, kale, etc.)
    • 1 teaspoon basil
    • 1/2 teaspoon black pepper
    • Dash of cayenne pepper
    • 1 teaspoon garlic powder
    • 1 teaspoon oregano
    • 1 teaspoon parsley
    • 1 teaspoon sea salt

How to make
Vegetable and Grain Casserole
  • In a 8-quart pot, sauté onions, peppers, and mushrooms.
  • Add rice and sauté for another minute.
  • Add remaining ingredients. Bring to a boil.
  • Cover and simmer for 45 minutes.
  • Serves 6 to 8 people
