Red eye gravy
Instructions:
- 2 tablespoons vegetable oil
- 1 slice country ham (see Note)
- 1 teaspoon sugar
- 2/3 cup hot coffee
- Pour the oil into a medium skillet and heat over medium heat. Add the ham and cook until lightly browned or both sides. Remove the ham to a plate.
- Pour the grease off into a small bowl. Sprinkle the sugar over the hot skillet. When the sugar begins to bubble and brown, pour the hot coffee into the skillet.
- Swirl around inside the skillet until it begins to boil, and then pour over the reserved grease. To serve, dip from the bottom of the bowl to get the “red eye.”
