RED, GREEN, AND YELLOW PEPPER SALAD

- 3 tablespoons olive oil
- 2 garlic cloves, finely chopped
- 1 red bell pepper, cut into thin strips
- 1 yellow bell pepper, cut into thin strips
- 1 green bell pepper, cut into thin strips
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook just until lightly colored, about 1 minute.
-  Add the peppers and cook, stirring, until softened, about 2 minutes. Season with the oregano and salt and pepper.
- Â Serve hot, at room temperature, or chilled.
