Red Pepper Relish
Instructions:
Use this on almost anything grilled, but especially chicken
or fish. Add a pinch or two of ground cumin if you like.
4 Roasted Red Peppers
1 tablespoon olive oil
1 teaspoon balsamic vinegar
1/4 teaspoon minced garlic
Salt and freshly ground black pepper
MAKES: 4 servings
TIME: 1 hour
- Roughly chop the peeled roasted peppers and mix with the oil, vinegar, and garlic. Sprinkle with salt and pepper.
- Stir, then taste and adjust the seasoning. Serve immediately or refrigerate for a day or two (bring back to room temperature to serve).
