Rhubarb Muffins
Instructions:
- 1 1/4 cups of brown sugar
- 1/2 cup of vegetable oil
- 1 egg
- 1/2 cups of milk
- 1 teaspoons of vinegar
- 2 teaspoons of baking soda
- 1/2 teaspoon of salt
- 2 1/2 cups of flour
- 2 teaspoon of vanilla extract
- 1 1/2 cups of rhubarb, cut up
- For the topping:
- 1/2 teaspoon of cinnamon
- 1/2 cup of sugar
- 1 tablespoon of butter
- Grease a muffin pan or line with paper baki ng cups.
- Mix the first 3 ingredients together and add the dry ingredients alternately with the milk.
- Add the vanilla extract an d rhubarb, and stir by hand.
- Fill muffin cups 3/4 full.
- Top with topping mixture.
- Bake at 350 degrees for 20 -25 minutes.
