Rhubarb Pecan Bread
Instructions:
- 1 1/2 cups if brown sugar
- 2/3 cup of vegetable oil
- 1 egg
- 1 cup of buttermilk
- 1 teaspoon of baking soda
- 2 1/2 cups of flour
- 1 1/2 cups of diced fresh rhubarb
- 1/2 cup chopped pecans
- Topping:
- 1/2 cup of sugar
- 1 tablespoon of butter
- Combine the brown sugar, oil, egg, buttermilk, soda, flour, rhubarb and the pecans.
- Pour into 2 greased and lightly floured loaf pans.
- Mix topping ingredients together and sprinkle over batter.
- Bake at 350 degrees for 1 hour.
