Roasted Asparagus
Instructions:
- Easy and tasty, oven-roasting is sure to become a favorite way to enjoy this vegetable.
- 2 pounds asparagus, trimmed
- 1 tablespoon olive oil
- 1â„2 teaspoon salt
- 1â„4 teaspoon coarsely ground black pepper
- freshly grated lemon peel (optional)
- lemon wedges
- Preheat oven to 450°F.
- In large roasting pan (17" by 111â„2"), toss asparagus, oil, salt, and pepper until coated.
- Roast asparagus, shaking pan occasionally, until tender and lightly browned, about 20 minutes. Sprinkle with grated lemon peel, if you like, and serve with lemon wedges. Makes 6 accompaniment servings.
