ROSEMARY FIGS WITH HONEYED FRESH CHEESE

- 8 to 10 ounces ripe dark figs (Calimyrna, Brown Turkey, Mission, etc.)
- 4 to 5 ounces fresh goat, sheep, or cow’smilk cheese
- 3 to 4 tablespoons honey
- 1 teaspoon chopped fresh rosemary leaves
- 3 tablespoons crushed salted pistachio nuts
Instructions:
Figs are the only fruit that can make you blush when you’re alone.
- Halve the figs from top to bottom. Smear each half gently with about a teaspoon of cheese. Arrange the halves on a platter, and drizzle them generously with honey. Sprinkle with the rosemary and pistachios.
