Salmon Cakes
Instructions:
- 1 - 7 1/2 ounce can salmon, drained and flaked
- 1/3 cup of saltine cracker crumbs
- 1 egg, slightly beaten
- 2 tablespoons of chopped onion
- 2 tablespoons of milk
- 1 tablespoon of lemon juice
- 2 tablespoons butter or margarine
- In medium bowl, combine all ingredients except the butter, and blend well.
- Shape the mixture into 4 patties.
- Melt the butter in a skillet and fry the patties on both sides until golden brown and heated throughout.
