Salmon with Savory Seafood Rub
- Four 6- ounce salmon fillets, rinsed and patted dry
- 2 tablespoons olive oil
- 1 tablespoon dark brown sugar
- 1 teaspoon dry mustard
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
Instructions:
It’s important to pat the fillets dry. Otherwise the oil and seasonings will not adhere properly.
- Place the fillets on a foil- lined baking sheet. Spoon the olive oil evenly over all. Combine the brown sugar, dry mustard, chili powder, and cumin in a small bowl; mix well. Sprinkle the rub over the salmon; press down to allow the spices to adhere. Refrigerate for at least 30 minutes to overnight.
- Preheat the oven to 400°F. If refrigerated for 30 minutes, bake the salmon for 8 to 10 minutes until opaque in the center. If refrigerated overnight, bake for 10 to 12 minutes until opaque in the center. Do not overcook.
