SAUCE FOR ROAST TURKEY
Instructions:
- 3 tbsp flour
- 3 tbsp pan drippings (avoiding fat)
- 1 cup broth
- 1/2 cup milk or table cream
- 1 tbsp blue cheese
- 1 tbsp red currant or grape jelly
- white pepper
- salt
- Heat up the drippings.
- Add the flour and stir briskly until it acquires a bit of colouring.
- Add the broth, stir and let it boil over high fire, stirring continuously.
- When the sauce is thickened somewhat, add milk or cream.
- More milk makes the sauce more fluid.
- Remove from fire and stir in the blue cheese and the jelly.
- Add salt and pepper to taste.
- Pour in a heated sauce bowl and serve warm.
