Sausage and Pepper Grill
Instructions:
For hearty sandwiches reminiscent of those found at Italian street fairs, grill Italian hero rolls, split them open, and top with this sausage, pepper, and onion mixture. If you prefer, toss the grilled sausages and vegetables with cooked ziti, add grated Parmesan cheese, and serve. 1â„3 cup balsamic vinegar 1 teaspoon brown sugar 1â„2 teaspoon salt 1â„4 teaspoon coarsely ground black pepper 2 medium red peppers, cut into 11â„2-inch-wide strips 2 medium green peppers, cut into 11â„2-inch-wide strips 2 large red onions (about 8 ounces each), each cut into 6 wedges 1 tablespoon olive oil 3â„4 pound sweet Italian sausage links 3â„4 pound hot Italian sausage links
Makes 4 main-dish servings Prep: 15 minutes Grill: 15 minutes
- Prepare outdoor grill for direct grilling over medium heat.
- In cup, with fork, mix vinegar, brown sugar, salt, and black pepper. In large bowl, toss red and green peppers and onions with oil until evenly coated.
- Place sausages and vegetables on grill. Cook sausages, turning occasionally, until golden brown and cooked through, 15 to 20 minutes. Cook vegetables, turning occasionally and brushing with some balsamic mixture during last 3 minutes of cooking, until tender, about 15 minutes. Transfer vegetables and sausages to platter as they finish cooking.
- To serve, cut sausages diagonally into 2-inchthick slices. Drizzle remaining balsamic mixture over vegetables.
