Sausages with mushrooms
Instructions:
- Remove the skins from the sausages and pinch the sausage meat into walnut-size balls.
- Heat the oil in a large frying pan. Gently fry the sausages for 3-4 minutes over medium-high heat, until golden on all sides.
- Peel and lightly crush the garlic cloves. Add to the pan along with the sprigs of rosemary and thyme.
- Continue to fry for 5 minutes.
- Meanwhile, clean, trim, and quarter the mushrooms.
- Pour the vino rancio into the pan and scrape the bottom to loosen any sediment. Use a little water if needed. Remove the pan from the heat.
- In another pan, fry the mushrooms in a little oil for 5 minutes, until golden.
- Add the mushrooms to the sausages and cook over medium heat for 15 minutes, until they are cooked through.
- Pick the leaves from the parsley stems and finely chop.
- Stir in the chopped parsley, season with salt and pepper, and serve.
