Savory mashed cauliflower
Instructions:
- Bring the cauliflower, garlic, and stock to a simmer in a large saucepan over medium-high heat. Cook until the cauliflower is very tender, about 15 minutes.
- Working in batches, use a slotted spoon to transfer the cauliflower and garlic into the bowl of a food processor fitted with the metal blade. Do not fill the bowl more than half full. Process to the consistency of soft mashed potatoes. Add a splash of the cooking liquid, if needed. (For coarser texture, simply mash the cauliflower with a hand-held potato masher or a fork.) Transfer the puree into a large bowl. Fold in the butter, sour cream, cheddar, and Parmesan. Season with the salt and pepper. Serve hot.
