Sesame Date Yogurt Cups

- 7 Medjool dates, pitted
- 2 tablespoons toasted sesame seeds, plus more for sprinkling
- Sea salt
- 2 cups Greek or plain goat’s milk yogurt
- ½ teaspoon ground cinnamon
- ½ cup crisped brown rice
Instructions:
Good Medjool dates should be plenty soft enough to mash up with a knife. However, letting them sit in hot water, then draining them well, makes this step a bit easier.
- Soak the dates in warm water for 10 minutes to soften. Drain and chop into pieces. Put them in a bowl with the sesame seeds and a pinch of salt and mash it all together to create a chunky paste. Press a fourth of the date mixture into the bottom of each of four small glass jars.
- In a bowl, stir together the yogurt and cinnamon, then spoon ½ cup of the yogurt into each jar, on top of the date mixture. Sprinkle a few sesame seeds on top and add a couple spoonfuls of crisped brown rice for crunch. Enjoy cold.
