Seven-minute icing
Instructions:
- 3 cups sugar;
- 1⁄2 cup water;
- 1⁄2 teaspoon cream of tartar;
- A few grains of salt;
- 4 egg whites;
- 4 teaspoons vanilla.
- Mix sugar, water, cream of tartar, salt, and egg whites in the top of a double boiler.
- Set over boiling water and beat with an electric mixer, for exactly 1 minutes, beating all the while. Blend in the vanilla.
