Shaker dessert omelet

The Shakers were very successful orchardists, and they believed in the importance of apples in the diet. Combining apples with sweet fresh butter and fresh eggs, the Shakers made this wholesome dessert and served it with a cider sauce made from homemade cider.
- 4 large tart apples, pared, cored, and chopped;
- Cider;
- 1⁄2 cup sugar;
- 1⁄2 teaspoon nutmeg;
- Cider Sauce;
- 4 eggs, well beaten;
- 1 tablespoon butter.
- In large saucepan, cook the apples in cider to cover, until soft. Strain and reserve the juices for the sauce. Press apples through a sieve to puree. Combine with the sugar and nutmeg. Cool. Prepare the Cider Sauce. Preheat oven to 250 F. When apples are completely cooled, beat in the eggs. Spread butter evenly over the bottom and sides of a shallow 1-quart baking dish. Pour mixture into the dish. Bake 20 minutes. Serve warm with Cider Sauce.
