Shaker strawberry sauce

The Shakers, a Utopian community in America, had their origin in French Protestantism. They merged with the radical Quakers in England and in 1787 settled in New Lebanon, New York, to establish religious freedom. Ingenuity and simplicity are the marks of Shaker tradition. Their furniture, for instance, is classic. Much of Yankee design and many inventions—such as the buzz saw, rotary harrow, the threshing machine, apple corer, and the common clothespin—are credited to the Shakers. Shakers also believed in simplicity in food, although they ate well. This fluffy, fresh-tasting strawberry sauce can be served as is, over plain white cake, or over plain rice pudding. Shaker cooks would make this on a platter so that plenty of air could be beaten into the sauce. This takes a lot of energy and a strong arm when using a flat whisk!
- 1 egg white;
- 1 cup fresh strawberries, mashed;
- 1 cup powdered sugar;
- 4 tablespoons butter, at room temperature.
- In a large mixing bowl, beat the egg white until very stiff. Add the crushed berries and beat until light and fluffy. Gradually add the sugar and beat until the mixture stands in peaks, about 5 minutes.
- Beat in the butter until it is worked into the foam. Serve immediately.
