Shell beans braised with sage and tomato

- Drain the Basic Cooked Shell Beans
, reserving the cooking liquid. - Heat the oil in a large, heavy skillet (preferably cast-iron) over medium-high heat. Add the garlic and sage and cook, stirring, until they begin to sizzle. Stir in the beans, tomato, salt, and pepper and 1 cup of the reserved cooking liquid. Reduce the heat and simmer until the sauce is thickened and very creamy, about 20 minutes. Add a little more of the cooking liquid if the beans get dry.
- Check the seasoning and serve hot, drizzled generously with more oil.
