Shrimp and Potatoes in Feta Tomato Sauce
Instructions:
Feta cheese gives this Greek-style dish a tangy finish. 1 tablespoon olive oil 2 medium onions, chopped 11â„2 pounds all-purpose potatoes, peeled and cut into 1-inch pieces 1 large garlic clove, finely chopped pinch ground red pepper (cayenne) 3â„4 cup water 1â„2 teaspoon salt 1 can (14 to 16 ounces) tomatoes 1 pound medium shrimp, shelled and deveined 4 ounces feta cheese, crumbled (1 cup) 1â„4 cup chopped fresh dill
Makes 4 main-dish servings. Prep: 20 minutes Cook: 50 minutes
- In nonstick 10-inch skillet, heat oil over medium heat. Add onions and cook, stirring frequently, until tender and golden, about 10 minutes.
- Add potatoes and cook, stirring, until potatoes begin to brown, about 10 minutes. Stir in garlic and ground red pepper and cook 30 seconds. Stir in water and salt; cover and cook until potatoes are almost tender, about 10 minutes.
- Add tomatoes with their juice, breaking up tomatoes with side of spoon. Cook, uncovered, until liquid has thickened slightly, about 10 minutes.
- Stir in shrimp and feta. Cover and cook until shrimp are opaque throughout, 3 to 5 minutes. Remove from heat and stir in dill.
