Simple garlic mashed potatoes
Instructions:
- Kosher salt
- 1½ pounds Yukon Gold potatoes
- ¼ cup heavy cream
- 1 tablespoon Roasted Garlic Puree
- ¼ cup extra virgin olive oil
- Freshly ground black pepper
- Preheat the oven to 350 F.
- Spread a layer of salt over the bottom of a shallow baking pan. Lay the potatoes on top of the salt and bake for about 40 minutes, until fork tender.
- When the potatoes are cool enough to handle, peel and discard the skins. Push the potatoes through a potato ricer or food mill into a saucepan set over low heat. Add the cream a little at a time, stirring to mix well. Stir in the Roasted Garlic Puree and olive oil and season to taste with salt and pepper. Stir the potatoes until smooth and all the ingredients are well incorporated.
