SIMPLE GRILLED TUNA

THERE IS nothing worse than overcooked fresh tuna and nothing better than a perfectly grilled tuna steak. When its surface is seared and its interior rose colored and slightly translucent, tuna is perfect. And grilling tuna is the best way to prepare the fish. The fewer embellishments the better. Fresh tuna needs little else besides a rubbing of olive oil, salt, and pepper.
- Vegetable oil for brushing grill rack
- 4 (10- ounce) boneless tuna steaks
- 4 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper to taste
Instructions:
- Heat the grill to hot. Oil the grill rack.
- Rub each tuna steak with 1 tablespoon olive oil and season on both sides with salt and pepper. Place the tuna steaks on the rack. Grill for 3 to 4 minutes per side. To check for doneness, bend the tuna a little using a pair of tongs. The center should still be pinkish and translucent. Remove and serve.
