Skillet okra
Instructions:
- The okra must be very dry, so pat it dry if necessary. Heat the oil in a large, heavy skillet (preferably cast-iron) over high heat until shimmering hot. Add the okra and cook, gently shaking the skillet to roll it around to cook evenly, until the pods are browned on all sides, about 5 minutes. The okra might hiss and pop a little.
- Remove the skillet from the heat, cover, and let sit for 5 minutes. Season with salt and pepper and serve straightaway.
