Skillet zucchini with chopped tomatoes
Instructions:
- 1 teaspoon soft margarine;
- 2 small onions, chopped;
- 4 small zucchini, thinly sliced;
- 2 medium tomatoes, chopped;
- ground pepper.
- Melt margarine in a skillet over medium heat.
- Add onions and cook until softened.
- Add zucchini and cook for two minutes.
- Add tomatoes and cook for 3-5 minutes or until zucchini is tender.
- Season to taste with pepper.
- Serve. Serves: 4
