Smoked turkey and cherry salad in melon rings
Instructions:
- Whisk together the mayonnaise, sour cream, ginger, honey, vinegar, and poppy seeds in a large bowl. Stir in the turkey, cherries, scallions, celery, and pecans. Season with salt. Cover and refrigerate until chilled, at least 2 hours and up to overnight.
- Cut the melon crosswise into 3⁄4-inch rings. Peel the rings and discard the seeds. You should be able to get 4 rings of similar size from the widest part of the melon. Place a ring on each serving plate. Spoon the salad into the rings and serve lightly chilled.
- What else works? You can replace the cherries with grapes, blueberries, or melon balls carved from the pieces left after cutting the rings.
