Smoked Turkey Cobb Sandwiches with Wisconsin Blue Cheese Mayonnaise

Wisconsin blue cheese mayonnaise:
- ¼ cup blue cheese
- ¼ cup mayonnaise
- 1 cup puréed avocado
- Salt and pepper, to taste
- ¼ teaspoon lemon juice
- 8 slices sourdough bread
- 2 ounces mixed greens
- 8 slices tomato
- 8 slices smoked turkey
- 8 strips bacon, fried crisp
Instructions:
Based on the classic Cobb salad, these smoked turkey and bacon sandwiches on sourdough bread include a blue cheese mayonnaise and avocado puree.
- For the blue cheese mayonnaise, combine the cheese and mayonnaise in a small bowl, and mix well.
- For the avocado purée, in a small bowl or blender, blend the avocado purée, salt and pepper, and lemon juice.
- To assemble the sandwiches, spread one bread slice with 1 to 2 tablespoons of the blue cheese mayonnaise. Layer the mixed greens, 2 tomato slices, 2 turkey slices, and 2 bacon strips on the bread. Spread another slice of bread with the avocado purée, and top the other half of the sandwich. Repeat, using all ingredients (there will be extra blue cheese mayonnaise).
