Smoky Wisconsin Cheese Fondue

- 1 cup (4 ounces) shredded smoked Cheddar cheese
- ¾ cup shredded Gruyère cheese
- ½ cup shredded pepato or Asiago cheese
- 2 tablespoons all-purpose flour
- 1 teaspoons dry mustard
- 1 cup dry white wine
- 1 teaspoon Worcestershire sauce
- 3 to 4 drops hot pepper sauce
- 1 teaspoon Dijon mustard
- 1 loaf sourdough bread, cut into cubes

- In a small bowl, combine the cheeses, flour, and ground mustard. Toss to coat.
- In a small saucepan, bring the wine to a simmer. Add a small handful of the cheese mixture to the simmering wine and stir until the cheese has melted. Repeat the process until all of the cheese has been melted. Add the Worcestershire, hot pepper sauce, and mustard, and cook on low until the mixture is thick and smooth. Transfer to a fondue pot and keep warm. Serve with fondue forks and the cubes of bread for dipping.
