Southern Fried Chicken
Instructions:
- 1 large fryer, cut up
- 1 cup shortening
- ½ cup butter
- 1 cup flour in a large bowl
- salt and pepper and poultry spices to taste
- 2 eggs, beaten
- Melt shortening and butter in a frying pan.
- Cut fryer into pieces. Sift flour, salt, pepper, and spices together in a bowl.
- Roll each piece of chicken in flour/salt/pepper/spice mixture.
- Dip floured chicken in beaten eggs and roll into flour mixture again. Drop in boiling fat.
- Fry until golden brown. Drain on paper towel, then serve immediately.
- Serves six.
