Southern lemon bars
Instructions:
These are an old family favorite, loved by all

2 cups all-purpose flour
½ cup confectioners’ sugar
1 cup (2 sticks) butter or margarine, softened

- 4 eggs, beaten
- 2 cups granulated sugar
- 1/3 cup lemon juice
- ½ cup all-purpose flour
- ½ teaspoon baking powder
- ¼ cup confectioners’ sugar

- Preheat the oven to 350 F.
- Sift together the flour and confectioners’ sugar into a large bowl.
- Cut in the butter until the mixture sticks together. Press into a 9 x 13- inch dish. Bake for 25 minutes, or until lightly browned.
- Remove from the oven to cool.
- Leave the oven on.

- While the crust is cooling, make the filling. In a large bowl, combine the beaten eggs, granulated sugar, and lemon juice.
- In a separate bowl, sift the flour and baking powder; stir into the egg mixture. Pour over the baked crust and bake for 15 minutes, or until slightly browned and set.
- Remove from the oven, cool, and sprinkle with confectioners’ sugar. Cut into bars.
