Southern Style Greens
Instructions:
This classic recipe makes a big batch, but it can easily be halved. Be traditional and do what Southerners do: drink the flavorful cooking liquid (pot liquor) or dunk chunks of corn bread into it. 5 pounds assorted greens, such as kale, collard greens, and mustard greens 11â„2 pounds smoked ham hocks 1 medium onion, quartered 8 cups water 1 teaspoon salt hot pepper sauce
Makes 10 accompaniment servings. Prep: 30 minutes Cook:1 hour 15 minutes
- Trim and discard stems and tough ribs from greens; rinse well with cool running water. Cut into 1â„2-inch pieces.
- In 8-quart saucepot, combine ham hocks, onion, water, and salt; heat to boiling over high heat. Add greens in batches, stirring to wilt. Heat to boiling. Reduce heat; cover and simmer until very tender, about 1 hour. Discard ham hocks. Serve with hot pepper sauce.
