SouthernTomato gravy
Instructions:
- 3 tablespoons bacon grease or oil
- ¼ cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1½ cups milk
- One 15-ounce can diced tomatoes, drained
- Pour the bacon grease into a medium skillet and heat over medium heat. Add the flour and stir to combine. Add the salt and pepper.
- Cook, stirring constantly, until the flour begins to brown.
- Slowly pour in the milk, stirring constantly with a wire whisk to break up any lumps. Lower the heat to low and continue cooking and stirring until the gravy thickens.
- This will happen pretty fast, so stay on your toes! Add the diced tomatoes. Lightly mash the tomatoes with a fork to break them up into smaller pieces and stir until heated through.
- Don’t mind the lumps from the tomatoes—that’s what gives tomato gravy its character.
