Southwestern vegetables
Instructions:
- Melt the butter in a large skillet over medium-high heat. Add the corn, squash, and zucchini and a pinch of salt and cook, stirring often, until the vegetables are tender, about 6 minutes.
- Stir in enough salsa to coat the vegetables. Cook until hot and bubbly, about 2 minutes. Season with salt and pepper. Garnish with the cilantro and serve hot.
- What else works? You can vary the proportions of squash and zucchini or replace some of it with diced mirliton.
