Spiced Watermelon and Tomato Salad
Instructions:
The combination of watermelon and tomato makes a surprisingly tasty and refreshing salad. Seedless watermelon makes preparation easy. Choose one that is heavy for its size and makes a thud when tapped. 3 ripe medium tomatoes (about 1 pound), cut into 3â„4-inch pieces 1â„4 cup fresh lime juice (2 to 3 limes) 1â„2 teaspoon salt 1 piece watermelon (about 21â„2 pounds with rind) 2 tablespoons chopped fresh cilantro leaves 1â„2 teaspoon ground cumin 1â„2 teaspoon ground coriander 1â„8 teaspoon ground red pepper (cayenne)
Makes about 6 cups or 10 accompaniment servings Prep: 20 minutes
- In large bowl, toss tomatoes with lime juice and salt; set aside.
- Cut rind from watermelon; discard rind. Cut flesh into 1â„2-inch pieces to equal 4 cups; discard seeds.
- Add watermelon, cilantro, cumin, coriander, and ground red pepper to tomato mixture; toss well to combine. Serve at room temperature or cover and refrigerate to serve later.
