Spicy Chicken Over Angel Hair Pasta

- 3 to 4 tablespoons olive oil
- 4 cherry peppers, seeded and chopped
- 1 onion, chopped
- 1 red bell pepper, chopped
- 11⁄2 pounds boneless, skinless chicken breast halves, cut into bite- sized pieces
- 2 garlic cloves, chopped
- One 14- ounce can chopped tomatoes
- 1 pound angel hair pasta
- Parmesan
Instructions:
Cherry peppers are round, bright red peppers with a sweet and mildly hot flavor.
- Heat the olive oil in a large skillet over medium- high heat. Add the cherry peppers, onion, and bell pepper. Sauté for 2 minutes. Add the chicken; sauté for 3 to 4 minutes. Add the garlic and sauté for 1 minute longer. Add the tomatoes, reduce the heat to medium, and simmer.
- Cook the pasta according to the package directions; drain.
- Divide the pasta among 6 serving plates. Spoon the chicken mixture on top. Sprinkle with Parmesan.
