Strawberries in champagne

This recipe came from a vintner's wife in California, who suggests that instead of rinsing the berries in water, rinse them in white wine; this adds flavor rather than making them watery. Another way to clean the berries is to hull them and polish them with a terry-cloth towel. Just put 6 or 8 large ripe, juicy berries into a towel, and, holding both ends with both hands, roll the berries back and forth until they are shiny.
- 1 quart large strawberries, hulled;
- 4 tablespoons brandy;
- 4 tablespoons superfine sugar;
- 1 bottle brut champagne, chilled.
- Divide strawberries among 4 to 6 tall champagne flutes or stemmed balloon wineglasses. Drizzle with the brandy and sugar.
- Chill until ready to serve. Before serving, pour champagne over the berries.
