Sufficient grace summer squash with buttered crumbs
Instructions:
- Melt 2 tablespoons of the butter in a large, heavy skillet (preferably cast-iron) over medium-high heat. Stir in the crumbs and cook until crisp, golden brown, and fragrant, stirring often, about 5 minutes. Transfer into a medium bowl.
- Melt the remaining 2 tablespoons of butter in the skillet over medium-high heat. Add the squash and a pinch of salt and stir to coat. Cover and cook, stirring often, until the squash is barely tender and not at all mushy or watery, 5 to 8 minutes. Season with salt and pepper. Sprinkle the crumbs over the squash and serve hot.
