Sweet Orange Sauce
Instructions:
- 2 tbsp. oil
- 1 onion, diced
- 1 star anise, sliced
- 3 seedless unpeeled oranges, diced
- 2 cups red wine
- 2 cups chicken stock
- 2 cups orange juice
- 1/8 tsp. grated ginger root
- 3 tbsp. brown sugar
- 2 tbsp. balsamic vinegar
- salt and white pepper to taste
- 4 oz. orange liqueur
- In a small pot, heat the oil, then add the onion, star anise, and oranges.
- Deglaze with the red wine, simmer, and reduce by 80%.
- Add the stock, orange juice, and ginger. Simmer 10 minutes.
- Add the brown sugar, balsamic vinegar, salt, and pepper. Strain into a clean pot using a fi ne sieve.
- Bring the sauce to a simmer and whisk in the orange liqueur.
- Taste and adjust the seasoning if necessary.
