Sweet Potato Bread
Instructions:
- This is eaten as a breakfast dish or a snack
- 3â„4 cup sweet potato, peeled and coarsely grated
- 1â„2 cup plain flour
- 1 cup evaporated milk
- 1â„2 cup sugar
- 21â„2 tsp baking powder
- grated rind of 1 lemon
- Preheat oven to 3758F. Grease a loaf pan.
- Mix all ingredients thoroughly.
- Pour into pan.
- Bake for about 40 minutes. Test with toothpick for doneness: toothpick should come out dry.
- Cool for 5 minutes, then remove from the tin, and cool on a wire rack. Cut into slices to serve.
