Sweet Potato Cakes
Instructions:
- 1 cup of mashed sweet potatoes
- 2 cups of sifted flour
- 1 1/2 teaspoons of sugar
- 1 1/2 teaspoons of salt
- 2 1/2 teaspoons of baking powder
- 1/2 cup of vegetable oil
- 1/2 cup of milk
- Sift the flour, baking soda, sugar and the salt into a bowl.
- Mix the oil and milk with the mashed sweet potatoes until well blended.
- Add the sweet potato mixture to the flour mixture and mix lightly with fork until mixture holds together.
- Turn the dough out onto a floured board and knead gently until smooth.
- Roll dough out to about 1/4\" thick and cut into rounds with floured biscuit cutter.
- Place the sweet potato rounds on a baking sheet and bake at 425 degrees for 10 -20 minutes.
