Sweet Potato Pie
Instructions:
- 4 tablespoons of butter, softened
- 4 cups of mashed cooked sweet potatoes
- 2 cups of sugar
- 4 eggs
- 2 tablespoons o f flour
- 1 teaspoon of salt
- 1/2 teaspoon of baking soda
- 1 cup of buttermilk
- 2 teaspoons of vanilla
- 2 unbaked 9 -inch piecrusts
- In a large bowl, mix the sweet potatoes, butter, and eggs and mix well.
- Next in another bowl mix the sugar, flour, and salt together and then mix into the sweet potato mixture.
- Combine the bu ttermilk and the baking soda and add this to the sweet potatoes and mix well. Stir in the vanilla and pour the sweet potatoes in to the two piecrusts.
- Bake at 350 degrees for 1 hour and 10 minutes or until the pies are set.
