Sweet Potatoes with Pineapple
Instructions:
- 3 medium sized sweet potatoes, baked
- 1 can crushed pineapple
- 2 tablespoons butter
- 2 tablespoons sugar
- pinch of salt
- Bake sweet potatoes until soft (about 30 minutes), cool, slice lengthwise, scoop out center, and cream with butter, sugar, salt.
- Drain juice from can of pineapple and mix fruit with creamed potatoes.
- Fill shells with mixture and sprinkle a little crushed pineapple over top.
- Brown lightly and serve.
