Sweet Water Fish Baked over Red Peppers
Instructions:
- Wash the fish and pat dry with paper towels. Season with salt and set aside. Preheat the oven to 350 F.
- Heat the olive oil in a large skillet over medium heat and cook the onions, stirring, until wilted, 7 to 8 minutes. Add the roasted peppers, tomato, and paprika and simmer for 5 minutes. Remove from the heat and stir in the parsley.
- Spread the mixture in the bottom of a medium oiled baking pan. Dredge the fish in flour, tapping off any excess, and place the fish side by side over the onions and peppers. Bake, turning once, until the fish are golden on both sides and the onion mixture soft, 25 to 35 minutes. Remove from the oven and serve.
- Replace the onions with 2 large leeks, white and as much of the green parts as possible, sliced, and omit the roasted red peppers.
