Taco Soup
Instructions:
- 1 can black beans, rinse & drain
- 1 can corn (or equivalent amount of frozen corn)
- 3 cans chicken broth (3 cups)
- 1 can northern beans, rinse & drain
- 1 can pinto beans
- 1 large jar (quart size) thick & chunky salsa
- 1 chicken breasts, cooked and cut into small bite size pieces
- salt & pepper to taste
- Combine ingredients in a large stock pot. Bring to a boil & simmer 5 minutes.
- Serve with tortilla chips and shredded cheese. This makes a LARGE amount of soup so it is good to share with friends.
- Also freezes well.
