Tamale Pie 2
Instructions:
- 1/2 cup Olives, sliced
- 2 cups Frozen corn, thawed
- 1/2 tsp. Onion powder
- 2 cloves Garlic, chopped
- 1 tsp. Mexican Oregano
- 1 tsp. Paprika
- 2 tsp. Salt
- 1/2 cup Green peppers, chopped
- 2 cups Yellow corn meal
- 4 cups Stewed tomatoes, slightly blended
- Cook cornmeal in blended tomatoes for about 10 minutes.
- Add remaining ingredients and mix well.
- Put into a Pamsprayed casserole dish, cover, and bake at 350 F for 45 minutes.
- Remove cover and continue to bake another 15 minutes.
- Serving Suggestions:
- with Refried Beans
- sliced avocados makes a nice side dish
- serve with a fresh green or vegetable salad
