Tarragon Sauce

• 2/3 cup sour cream
• 4 tbsp chopped tarragon
• 1 tsp Dijon mustard
• 1 tbsp lemon juice
• Salt and pepper, to taste

Combine all the ingredients, cover, and chill until required. Serve with fried fish.
