Texas caviar
Instructions:
- This is truly the caviar of the South. With ingredients such as blackeyed
peas, tomatoes, corn, and fresh green onions, what’s a
Southerner not to love? This keeps well for several days in the
refrigerator and is actually better the next day, after the flavors have
had time to blend.
Most folks eat this caviar with tortilla chips. Personally, I like to get
a big old bowl of it and just eat it with a spoon.
- 2 cans black-eyed peas (with jalapeño if available)
- One 29-ounce can petite diced tomatoes
- Two 15-ounce cans whole kernel corn
- ¼ cup chopped fresh parsley
- 2 green onions, sliced
- One 16-ounce bottle zesty Italian dressing
- Drain the peas, tomatoes, and corn cans well and pour the contents into a large bowl or dishpan. Add the chopped parsley and onions.
- Pour the dressing over all and stir well.
- Cover and refrigerate until ready to serve. Serve with tortilla or corn chips.
